A simple salad with the spectacular sheep's sorrel...

A few lettuce leaves (about 80g), thinly shredded
30g sheep's sorrel
5g mint, finely chopped
½ apple, grated
½ small red onion (about 25g), grated
4g fresh ginger, grated then minced with a knife
Dressing (3 tbsp rapeseed /olive oil; 2 tbsp cider vinegar
1 teaspoon mustard
½ teaspoon honey
Salt to taste

1. Chop the lettuce roughly, add the sorrel, mint, grated apple, grated red onion, ginger then the dressing.
